LEMONADE

It's summer!

Well, almost. According to my wall calendar, summer starts June 21st. However, the temperature in Phoenix is supposed to hit 95 this week and that's enough justification to declare summer and hence, the drinking of lemonade!

Ingredients:

3/4 cup sugar + 1 cup water to make syrup
1 cup lemon juice (freshly squeezed, please!)
an additional 3 to 4 cups of water

This is pretty simple. First, start by making simple syrup (see, I told you it was simple). Mix 3/4 cup of sugar and 1 cup of water and place in a pot. Heat and stir until dissolved. Pour into pitcher.

Here's where it gets not-so-simple. Juice about 6 medium lemons. It helps if you roll the lemons (before cutting them) on the counter top while pressing on them. This breaks up some of the inside membranes and helps release juice. You should have about a cup of lemon juice when you're done. Add lemon juice to the simple syrup.

Add 3 to 4 cups of water, depending on how sweet you want the lemonade.
